Imported and domestic cheese display

Beef steak tomato with fresh mozzarella and basil

Beef carpaccio with spicy mustard sauce

Marinated asparagus, roasted sweet peppers, grilled artichokes,

Fresh seasoned cubes of fruits and berries.

 Salads

Mixed field greens with assorted dressings

Ceaser salad with croutons and shredded parmesan cheese

 Italian tomato salad, sliced cucumber salad in yogurt dill dressing

Bow-tie pasta salad with bell pepper and onion

Vegetable salad in balsamic vinaigrette

Mediterranean salad with feta cheese, kalamata olives and citrus dressing

Breakfast Station

Eggs and omelets cooked to order, condiments

Apple-wood smoked bacon

 Selection of rolls and breakfast bakeries and butter

Pork sausage, cheese blintzes with strawberry sauce,

Quiche Lorraine and eggs benedict with hollandaise sauce.

Gulf shrimp with brandied cocktail sauce and lemons

Seafood ceviche “diablo”

Smoked Scottish salmon with garnishes, mini bagels and cream cheese

Green tip mussels topped with cilantro chiffonade

Sushi display with garnishes

Prime Rib with jus- lie and horseradish sauce

Pit ham molasses glaze with honey mustard sauce

Herb crusted roast leg of lamb with mint jelly

Breast of chicken with fennel sauce and diced marinated poached apples

Grilled salmon with brandied lobster sauce and juliennes of cucumber

Veal pot roast with Marsala sauce

Blackened snapper filet with tropical fruit salsa
