Hotel Zaza
Houston Names Executive Chef
Bradley Manchester, a graduate of the culinary arts program at Art
Institute of Houston, has been named executive chef for the new
Hotel Zaza in Houston. Manchester will also oversee the hotel's
new restaurant Monarch.
Most recently Manchester was exec chef at the Renaissance Hotel in
Las Vegas, where he directed culinary operations for 40,000 square
feet of meeting and event space and three restaurants, including
ENVY Steakhouse, which received kudos as “Best New Restaurant Off
the Strip” and Wine Spectator's "Award of Excellence."
Manchester's extensive resume also includes:

Rucker to
Leave Downtown
In search of new opportunities, Randy Rucker, chef/owner of
laidback manor,
announced yesterday that he and his partner (his mother, Bootsie)
are selling their downtown restaurant at 706 Main Street, Houston,
to entrepreneur Sonu Lalvani.
Rucker emailed me to say that "laidback manor is not a place, it's
a mentality," and our "food styling and approach to dining will be
a better fit in one of Houston’s neighborhoods." He is very
appreciative of the support he has received from Houstonians and
the level of success his restaurant has achieved.
He plans to close the restaurant at the end of September 2006.
He opened on New Year's Eve 2005.
If you have not been to laidback manor, you still have time to
experience Houston's most controversial restaurant. On Monday
August 28, 2006 Rucker will host “An Evening in Celebration of the
Senses.” It will include live demonstrations of various cooking
applications used at the restaurant such as sous-vide cooking,
liquid nitrogen and freezing and powders.
The evening will begin with cocktails and canapés, followed by
live demonstrations that will guide guests into a multi-course
dinner. Due to limited space only 60 guests will be accommodated.
Cost is $150 a person, including wine pairings. New Orleans’s own
“gumbo” will be providing the entertainment for the evening.

Catalan to Open Soon
I visited the not-open-yet
Catalan yesterday
at 5555 Washington Avenue, Houston. Chef/partner Chris Shepherd
and general manager/partner Antonio Gianola were
hard at work putting the finishing touches on the white tablecloth
restaurant,
getting ready for their upcoming opening.
The floor plan of the restaurant is similar to
Ibiza, the
restaurant owned by their partners, Charles Clark and Grant
Cooper, with its open kitchen and great wall of wine.
It differs from Ibiza with its full bar and lounge area. And
leading into the bar area,
beautiful glass butterfly 'interpretations' are suspended from the
ceiling.
(Antonio told me that catalan is a word for butterfly in Spanish.)
I also visited Ibiza and saw that construction on their Ibiza
Lounge Next Door is continuing. The multi-colored tile floor is in
place and it's a bigger space than I expected.
It's going to be very nice.
Catalan hopes to open for business next week, but it will be a
very quiet opening.
No big hoopla.
Let's give them a chance to get things going before we all
converge upon them. |

I have a question that I was hoping you could help me with.
I am looking for a restaurant for a rehearsal dinner for 50-60
people.
I'd like to find something unique to Texas and not a typical menu
of steak, fish, etc.
Money is not a major concern. Any suggestions you have will be
appreciated.

Shade restaurant in the Heights is now offering WiFi to their
guests.
I wish more restaurants would install WiFi.

is Texas Cheese Steaks Closed?
Hi Cleverley,
I wanted to see if you could give me some info on what happened to
Texas Cheese Steaks on far west Westheimer? After I read about it
in your newsletter, I took my kids and we absolutely loved it!
(I am from Philadelphia and the other options in town are not
worthy.)
We loved the cheese steaks as well as the fresh cut fries.
The guys who worked there were great, too.
We went there at least twice a week.
Can you tell me what happened?

Hi Judy,
Thanks for your email. I am flattered that you took my
recommendation
and tried this tasty restaurant. I attended college in
Philadelphia
(Wharton at Penn-any fellow alums reading this?) and I, too, could
not
find a good cheese steak in Houston until I found Texas Cheese
Steaks.
Donald Chang's Texas Cheese Steaks, 12225 Westheimer, has been
closed
for over a month because there is no electricity in the strip
shopping center
where he is located. A posted sign states that power was knocked
out due to
a storm. Because there is no power, construction has also been
halted on Chang's
newest restaurant, Bluefin Sushi, next door.
Actually all of the tenants in the shopping center are closed due
to no power including
a check cashing store and It's a Grind coffee shop. And, a brand
new Cabo Mix-Mex Grill
stands ready for its grand opening but can't do it without power.
It seems very strange to me that there would be no power and those
businesses remain closed for so long. A chat with an employee of
one of the businesses in that strip center said that the landlord
knows what's going on and that power might be restored in late
September.
